Since Northstar are so bad about overheating and since aluminuim heads it can destroy your car you would think everyone would buy the new failsafe thermostats, what am i missing?

Gimmick is why.
If HG fails no thermostat in the world is going to help regardless of engine.
N* aren't so bad about overheating either. In reality the percentage is low, compare it to lifter failures on GM trucks which is high.
Aluminum heads aren't the issue... Fine threads into aluminum block was the issue and poor castings quality.

But even so, if you on the road and your thermostat fails, you have to pull over and have a tow, with failsafe you good to make it home, right? or still would you go with a reglar ac delco thermostat?

Odds of thermostat failing are small really. Ive had it happen but ive had way more dead batteries, flat tires and other issues.
Not saying not to run one purely for sake of if thermostat fails it fails open(good design) but to run it thinking it's needed on N* due to "overheating" issues it isn't needed. Also these engines are designed to run 50 miles zerl coolant in them.
Now if this engine was a real SOB to change a thermo on as some newer cars aka it'd cost a fortune on the road to get done then yes I'd swap it. Same reason I changed my serp belt on my PA once a yeat8as it was a 3 hr job if broke on vaca.
