Which wiring harness?

Gmrc 03? Gmos 06? I'm going to put a aftermarket head unit in and curious to which harness is the best option. I've read some that the Gmrc isn't great. A friend recommended me the gmos 06 says it does everything needed. Any input will be appreciated. 99 sls.

It may depend on which factory radio option is in the car. Anything down in Audio, Video, Security ?

Gmos-06.

If you want to retain steering wheel controls, you'll need a separate module. PAC makes one. The new HU must be compatible though.

Is there any other wiring harnesses?

PAC may make an integration module as well, not sure. Google PAC audio and look on their site.
