I have a quick question. Could I still use regular (not low profile) tires if I upgrade to 18 inch rims? I'm also debating to go with 17" wheels also.

What is your current tire set up? I have 225/45/18 tires on my summer rims and it has 4" sidewalls.
Right now I just have everything stock with 16" rims

If you use a tire that yields a larger overall diameter, you are going to change your speedometer, the ride quality, and the handling of the car. And you will likely rub in the fender somewhere.
