Is the front end alignment affected by replacing the struts on the 2005 Devilles?

If you replaced the struts with factory units with the round bolt holes - no.

If you went aftermarket and the struts have oblong mounting holes, then, yes - alignment needed.

I got the aftermarket Monroes with the olong holes. I guess I will have to wait till next Saturday to put them on and make an appointment to get it aligned.

it will depend, if you are replacing the strut assy that includes a new spring, that may cause the car to have a different ride height. Depending how much the ride height changes will effect alignment.
