Okay, how critical is the IAT sensor. I unplugged mine on my 99 STS while I had the intake tube off and forgot to plug it back in. I went on a 60 mile drive and didn't realize it was unplugged until the next day. It didn't throw any codes which surprised me.

What exactly does it do and how can I tell if it is working properly? I assume the sensor is OK, but why no codes when it was unplugged?

It measures the Intake Air Tempurature and relays it to the PCM so it knows how rich the fuel mixture needs to be. It should throw a code if it is unplugged. I am sure you can test it by taking a resistance reading but without a manual infront of me I don't know what it should be. I am sure it will vary with tempurature. As to why it didn't throw a code, I am unsure.
