Car is stock with the exception of a Maggie with an 8# pulley. My question is if the stock exhaust and manifolds are hamstringing the Maggie, or if I wouldn't gain much with Headers and exhaust, or even a cat back exhaust. It's not a sound thing, it's a power thing. In short, how good are the stock LS6 manifolds and exhaust?

You will gain with long tubes.

You will simply change the sound with a cat back. Just swap the mufflers to remove the restriction in the system as the stock mufflers are not great (on my car at least). Stock resonator is already an xpipe.

With a Maggie your better off spending cash on heat mitigation, but that's just my opinion though research.

I was super happy with the results NA with header swap and tune. Bear in mind that if you don't use kooks or the kooks clone you will loose ground clearance. Pacesetter and the Chinese DNA motoring headers will loose ground clearance. The DNA is however the best bang for the buck and I was happy with them (other than the ground clearance).

I currently run kooks into kooks cats and GMPP (Borla) catback and have no desire to go back to stock.
