Sorry if this has been asked before, but...

2016 Platinum ESV, almost 61K miles -- have noticed some hard shifting (up and down). Acceleration is still great. Does this have anything to do with the torque converter?

No. The torque converter clutch issue is a shudder that feels like you are driving on a rumble strip. That is fixed with a trans fluid flush with an updated fluid.
Harsh shifting is mostly fixable with software updates and/or valve body replacement. The 8 speed will never be 100% free of clunky shifting but it can generally be fixed to a tolerable level.

Took the car in last Monday, and they were nice enough to loan us a 2019 short wheelbase Escalade. Today, they called and said they flushed the tranny but that didn't work, so they had to replace the valve body. They also did a complimentary oil change and some brake reprogramming due to a recall. But, they need to keep it another day to replace the front brakes because they are just about worn out. Shouldn't they have noticed that when they did the CPO inspection this past December? We've only put 12K miles on it since buying it.

It may have been good enough to CPO certify 12k miles ago but now it’s worn enough to recommend replacement.
It’d be the same with tires. The CPO spec might be 5/32” thread depth or more...12k miles later they are at 4/32” or 3/32” depth and should be replaced.
CPO does not necessarily mean everything is restored to new condition.
