Does anybody know if the original M11x1.5 head bolts can be replaced with the stronger M11x2 used in later Nortstar engines. This would obviously be done when installing timeserts.
Also, can the longer 35 or 50 mm bolts be used?

I'm not sure I understand. I believe the x1.5 and x2 is the thread pitch. If it's a stock engine, it probably won't make much of a difference. Timeserts are more than adequate. IMO

The 11x2 seems to be stronger as it is a more coarse thread. I guess the 11x1.5 will do. Drilling to about 35mm might be a good idea though i think

depends on the length of the existing bolts...if they are for example 25mm and you drill 35mm you could end up in the block. so be careful. My suggestion would be stick to the specs.
