I was just told that the catalytic converters on my 2011 SRX need to be replaced, and that they are proprietary items. And while aftermarket converters exist, they will not resolve the error codes causing the vehicle not to pass inspection.

How much of this is true?

If you are in California, you cannot use aftermarket cats.

The other part about aftermarket cats not clearing the code is not true, as long as it is correct for your application.

They use a mirror and look under the car, or inspect the exhaust manifolds. Believe me they look. We have had plenty of repairs of tahoes and such where we have to install oem cats and take of those junks converters. The most obvious thing about them is that they are cut out welded in.
