It's ok,very easy to dry out when your cooking it.Lots of people have those birds around here.
There used to be a guy pimping emu meat and oils at regional state fairs, gun shows, etc. I listened to this guys "lecture" about how lean and good for you the meat is and how emu oil will cure cancer. There used to be a BIG market for emu and ostrich meat (and eggs) 15 years ago. After the market fell out and those "investors" lost their shirts they had to find creative ways to sell a less than spectacular meat. YMMV
