I saw a 2011 CTS-V sedan in the new Evolution Green at my dealership. It looked really nice. It looks more gray than green, but there is some green in it. Best way I can describe it: it's slightly lighter shade of grey than the Thunder Grey, with a hint of sage green in it. There was a Thunder Grey V-coupe next to it, so I could compare. The Thunder Grey had more of a blue/teal hint to the grey, whereas the Evolution Green had no blue tint at all in it, mostly grey, slightly lighter, with a hint of sage green.

Nice color - I would consider it.

CTS-V Sedan will not be offered in Evolution Green?! :(
I did notice that on cadillac.com; but I thought they simply hadn't updated the web site.
Not true. I saw a 2011 CTS-V sedan in Evolution Green in person, with my very own eyes. I thought the color was different from anything I've seen before, so I read the window sticker, and confirmed it was Evolution Green.

a cursory internet searched yielded a non-v cts on ebay...

evolution green cts
I had that car in that color. I can't believe I have no pics. However the color was a beautiful grayish green. Very rich color. Not bright. Sort of medium sage green. Looked different in shade and sun. Wish I could have bought the car after the lease was over. Car also handled beautifully. Beautiful car.
