I recently purchased a 2007 STS-V and lately the "Engine Hot - Turn AC Off" warning has been coming on. I looked it up in the manual and it says it's caused by the coolant fluids getting too hot, however it is winter time and it will come on like once a week and stay on for a day or so and not necessarily when I've been driving it a long time. Also, when it is on my temperature gauge does not work. Anyone had this issue or know what the solution would be? Thanks for any help you can give me.

More than likely a bad t-stat, actually quite common on both the V and normal V8 cars.

Throw a new tstat in it and never look back. My V dud that the day I took delivery on it /facepalm.

If you have any mechanical ability you can do this yourself, $14-20 part and some time and tools.

The hardest part for me was dropping the skirt under the car, the little clips were a pita on my car, all frozen and not releasing.
