Interesting thing happened a while back - driving my '92 (non N*) I "jumped" a Chevy pickup at a stop light (to get past him for a lane merge) - well - that was no issue - had plenty of power BUT the temp shot through the roof - I got a "coolant hot - idle engine" message - so I pulled over (providing an opportunity for the PU driver to beep his horn and give me the finger as he went by) and after a couple minutes the temp returned to normal (about 200 degrees).
This has happened twice since then (even after replacing the waterpump, thermostat, radiator cap and coolant to spec) - once when I got on the gas hard to pass a tractor on an uphill - once when I was just driving along. It is getting hot when this happens, so I don't think it's just deviant behavior on the part of a sensor or switch.
What's odd is that I don't appear to be using any coolant, I'm getting good heat (which is nice when it's in the 30's at 5AM on my way to work) and for the most part she'll run between 196 and 201 -
Any ideas as to what could be causing this? I didn't replace the belt or tensioner when I did the WP because it looked fine - I'm thinking (uh oh - there's a problem source) that the belt could be slipping when I really get on the gas - but I'm not hearing any squealing - any of you experience any thing like this and, if so, what caused it?

I too have a 92 seville and got the same message the other day but mine was because of a very bad coolant leak. I drove it home and looked under the hood and saw coolant just pouring out. I got it towed to my mechanic and it was a bad water pump. Maybe the water pump is whats causing your problem.

my 93 seville (also 4.9) had the same issue 1st it was the water pump, and after it was replaced and the system refilled, it did it again, caused by an air pocket in the cooling system.
te main symptom was similar to yours, when i ran it hard (sustained 3500 rpm+) it would report overheating
