I am trying to work on this car for my Grandfather, it seems to run fine except for the lack of acceleration (0-60 in min not sec). Did the obvious fuel filter replacement to no substantial gain. I never claimed to know anything about a Caddy, I normally only work on Fords, so any info would be helpfull!

Hmmm.... lack of acceleration is kinda vague..... It could be many things......

Lets start with the basics...... Is the car running rich..... Is the idle smooth..... Is it a hesitation or just lack of power......

Hows gas mileage?

Gas mileage unknown...sorry, idle is perfect, does not seem to be rich, with no hesitation.
If you wide open it runs smooth but takes a long time to increase rpm...I also found it will not pull itself over a 2 x 4 used to block the wheel.
Its seems like it is trying to pull a 10,000 lb trailer

Frozen caliper??? Do you have a lot of brake dust, even after nominal braking?
