There are a number of word working suppliers who sell exotic wood veneers to craftsman. Although some require you to apply the adhesive yourself (which can get rather messy) you can also get it with the adhesive already applied.
If the old venner is in decent enough shape you can use it as a stencil for the new stuff. If not it would simply be a matter of creating a stencil out of thick paper or such.
