I've read a few threads about time-serts....what are they and are they necessary for replacing head gaskets?

Read the head gasket thread in the tech section. There is a link to an article on doing the timeserts.

Timeserts http://www.timesert.com/ are a thread repair similar to helicoils but beefier and disigned specifically for the Northstar application. Once the heads are removed it is recommended that you do all 20 holes or it is likely that you'll pull the threads either on installation or 10K-20K down the road.
