There are lots of brands of threaded inserts so I was wondering if anyone has used non-"time" serts when replacing head bolts. They are like $2.50 a piece instead of however much the time-sert kits cost.

Timeserts where developed and tested by GM. They are the proper length, thread pitch etc. Use anything else and you are doing the testing. It is not a job you want to do again or pay for again. I'd use Timeserts.
I believe people have used heli-coils and ended up with a bigger headache at the end. If your gonna put all the time and effort into fixing the headgasket, this is not where I would start trying new things or cutting corners. Time-serts have always been referred to as the only fix and to accept no substitutes.. just do it right and you wont have to worry about it again.
The only other option is the kit on ebay. It looks OK but no one has given a review on it.
If you're not in a hurry watch for a used timesert set and get the inserts you need. You can then sell the set for close to what you paid. There is minimal wear doing an engine. It looks like the tools will last hundreds of engines.
