Years ago auto manufacturers did away with the coolant temperature numeric labels on there temperature gauges. I am sure that they did this to reduce the number of complaints they where receiving from worried customers. Especially with the variations in accuracy of these early gauges. That is why most of the temp gauges only list hot, normal and cold instead of there actual temperature. The advent of digital instrumentation promoted the display of the real temperature. I am sure that this has increased warranty claims. The manufacturers would rather you don't know what is really happening. They love idiot lights.

I would like to add that at least with my 90 Deville and many other cars simply turning the AC on (even if the AC is inop) will cause the radiator cooling fans to come on. No need to mess with an over ride switch. Jegs sells low temp thermostats if you want to try that.
