    Food: What is your favorite dish or dishes?

    When Autumn comes, I always start thinking more seriously about food. The days of the simple barbecue will soon be over for those of us who experience Winter!

    In my own case, it is hard to zero in on just one dish that I hold higher than any others. Like so many I am drawn to both Chinese and French cooking when push comes to shove. But then, I remember some of the totally outstanding Mexican dishes I have had, and the, of course, the wonderful Italian, both north and south, food that I have been lucky enough to enjoy.

    But at the moment I would have to single out a meal of: French "escargot" to start with Onion soup, sautéed sweetbreads and Cherries Jubilee for desert ... and Courvoisier or Grand Marnier afterward would leave me a very happy man!

    What favorite meal comes to mind when you think of favorite dishes?

    Pah, winter has never stopped me from grilling a ribeye outside.

    Ditto. I still use the grill at least twice per week throughout the winter, regardless of temps or precipitation. In fact, I prepared part of New Year's dinner on it last year.

    Benefits of fueling it with NG rather than propane.

    Snowmobiling... now that's something I've always wanted to try.

    Also, my favorite food is my mom's shepherd's pie.

    Damn it, I want. I must make this desire known for my trek home for Christmas.

    When I lived in Madison, Wisconsin I used to use charcoal lit in a garbage can top to thaw out the engine on my '62 Cadillac before starting it in -20 degree weather! It must be milder in Wisconsin and Chicago than it was in the 1960's.

    Yep - the ol" Weber is no stranger to snowy evenings.

    Ribeye steak, baked potato, some sort of green beans/peas, buttermilk biscuit, decent Cabernet, coffee, vanilla ice cream.

    ...........or head into DC Chinatown for a knock down drag out 6-course Chinese meal.

    For the grillers...........

    A 1.5+ pound flank steak. Marinate at least 5 hours in a bag of rosemary, minced onion, 1/2 t dry mustard, 1/2 c Wesson oil, 1/2 t sugar, garlic, salt, pepper, Lea & Perrins white Worcestershire sauce, 2 T white wine.

    Very hot grille. Medium rare. SHARP knife and slice paper thin on a shallow angle.

    Your choice of vegetable, a healthy red wine to stand up to the spices.

    Medium rare is a little too overdone for a flank, IMO. I prefer no more than rare on that cut. A flank quickly toughens as it's cooked, and maximum tenderness is well before medium rare.
