^^^ That's why the marinade time, and that's why the HOT grille.

RARE is for good filet mignon or a thick ribeye. (Lady, knock the horns off, wipe its ass, and run it in here !)

Several local steak houses have signs: "Medium well or well done steak is not guaranteed for flavor or tenderness."

Re: Food: What is your favorite dish or dishes?

i used to only eat well done. then again i used to not eat steak often.

now ive started to trend toward medium well or medium depending on the restaurant.

lately even medium well is too done for me, and medium is juicy and flavorful. again it depends on the chef/cooks interpretation of done-ness

    **edit**

    example:

last night me went out and i ordered medium well and my gf order medium

mine ended up being well done (overcooked), my gf's ended up being medium rare (undercooked)

That sounds like a copout to compensate for chefs who don't know how to cook a steak. I've had several medium wells that were downright delicious.

To each his own though. I've never been a big fan of rare beef.

Re: Food: What is your favorite dish or dishes?

I will often get prime rib at a steak house, and I also make it myself for my family at Christmas with garlic mashed potatoes and steamed asparagus. Always get raves from them, and it's so easy.

I grill year round, and I love steak. Usually I buy petite sirloins, grilled medium rare. The local grocery store has excellent meat. If I'm short on time, I'll do a baked potato; if I have more time, I make Crash Hot Potatoes, a tip from the inimitable Artie. I also make a nice Chicken Picatta from a recipe I got from a friend via the Food Network, usually served with risotto with sun dried tomatoes.
