As someone else mentioned in another post . . . it was probably a safety design to NOT allow all windows up by the FOB. You may not have full visual of your vehicle from a distance, and someone (child) could have hands, necks, etc . . in the window area.
I too wish it had windows up by FOB . . . .but alas, I do understand why it does not.
I believe Kuya's assumption is correct with having an "ALL" windows up feature not available for safety reasons.
FYI: The only vehicle that I know that has an ALL "Windows UP" feature is the two windows in an SSR (Chevrolet's Super Sport Roadster). When the SSR's hard top goes up if you keep holding down the roof "UP" button, the two windows will automatically go all the way up.
My 2008 Mercedes E350 had what they called the "tunnel feature." If you pressed and held the recirculation button for the ventilation system, all 4 windows went up. The windows-down feature on that car was not as easy to use as the one on my '11 SRX. On the Mercedes, you had to be right up near the driver's door and aim the IR end of the key fob toward and IR receiver on the handle for the windows to go down. Now I just hold the unlock button from across the parking lot as I approach the SRX and the windows go down. It is very helpful on these hot days in Florida.
