What power steering fluid do I use? The owners manual gives some AC part number. Is it Dexron III?

AFAIK, that vintage Caddy will take any standard Power Steering fluid. Dextron is a transmission fluid (not power steering fluid). While both are hydraulic fluids, I prefer to use transmission fluid in the transmission and power steering fluid in the power steering.
If you really want you could go to the GM dealer's parts counter and pickup the specific recommended fluid (order it using the part number from your manual). The parts man will probably give you a funny look...
