I realize this isn't an aircraft, but it could be used to shoot one down
Here is a video of the CIWS / Phalanx 20mm gun system that has been adapted for land use (originally a shipboard weapon) and modified to track and shootdown / destroy individual incoming artillery and mortar rounds. The first part shows it firing during testing (and has high speed film of the incoming rounds being hit) and the second part is while in use at night during a mortar attack. The popping sounds you here after the gun fires is the shells self-destructing. That way they don't fall on innocent people or equipment that might be downrange. It not only tracks the target, but also each bullet it fires to auto correct its aim.
