This product says it can hookup to the steering wheel controls and control an aftermarket headunit via its infrared feature.

Probably.
I tried a similar one (Metra, I think) in my '95 aurora, but I wanted to keep the fan/date function on my DIC, so I ended up tucking the old deck behind the dash, tapping the new system into it, and not using the module.
I sold it to my friend to use in his '97 Bonny, and it works great.

I have a 2000 sts and replaced the whole system. Everyone says, why did you take the bose out and when they here the system I installed in it they understand why! It really hammers and the sound quality puts the bose to shame! I had to hide the bose head unit in the side compartment in my trunk in order to keep all my feachers working. I have also purchased the peripheral interface but havent hooked it up yet. Im sure you will have to finde a way to bypass the stearing wheel controls from the factory unit or it will not only turn up your aftermarket, but it will also turn up your factory unit to. That is if you decide to keep your factory unit hooked up and hidden away somwhare.

They do make an interface that will keep your door chimes and all the other stuff that goes thru factory unit working, but it is expenseve and you could be asking for a lot of trouble.
If I install mine soon I will post it for you and let you know what I did to disable the factory unit.
