Here is a pic of my dash-
I am looking for a head unit or monitor to mount in my dash that will give me radio and GPS navigation, but not sure what will fit.
Here is what im looking at, tell me if it will fit or too big.

Your best bet, without a ton of extra work is one that flips out and up. Stock, you have a 1.5 din radio opening, so the usual double din fixed screen just won't work without significant modding.

the way it was done in my truck was they took a 15" flip down monitor and took in apart... then then used just the screen and molded it into the dash so what every the screen cost plus the labor of your shop

I installed a 15-1/2" monitor in my 02. I did all the fiberglassing, cutting, etc. and I'll guarantee it won't fit like they are telling you it will in your 2000, atleast it can't be done as your dash stands now. You would have to fiberglass onto it to make it fit from height to width. I took apart a flip down and basically mounted the bare screen to back of my bezel.
What you should do: Remove the CD player and Radio, then relocate the AC controls where the CD player is and put a double-din on top. This way, you can have a decent size monitor in your dash that controls your system, navigation, DVD's, radio, TV tuner, Ipod, etc.......

Wow, that Denali setup is a little overkill, but nicely done. I dont know how long I could stand being without the center air vents. Of all the things youd dislocate by doing that, the air vents would definitely be the clencher for me.
I think a 9 inch would be the most Id fiber in. It must also be extremely bright at night. Is the monitor set to auto-dim when the lights turn on?
