I would like to put either a cat back system or true duals on my 91 brougham 5.7. Has anyone done this? I was wondering if the 94 Impala ss system made by Edelbrock would fit or if any other vendor makes something to bolt on.

I you looking for a louder sound or more power? Both? Usually, the biggest restriction will be found within the cats themselves and the exhaust manifolds. Moving either to gutted cats (if you're not worried about the environment) or hi flow cats, along with headers, could give you an increase.
But don't forget to look at your car and its powertrain as a system. When it comes to making power, there is no magic pill. And one change usually effects another component, down the line. Freeing your exhaust, when you have a cam and heads that were designed to make better use of the older, more restrictive exhaust, may give you a marginal increase in top end horsepower, but you'll sacrifice low end torque. Torque is what you feel, and we usually drive in the lower end of the RPM range. So what have you really accomplished? Very little, and it cost you $$$ to boot.
I would step back and ask myself what I really want. Then I investigate how feasible it is with the Caddy. Buying a different car, in the long run, is usually a lot cheaper. But if you're hell bent on making power with the Brougham, I'd pull the motor and go through it. Upgrade the cam, heads, intake, etc.
For cheap bang for the buck, with little effort, you may want to inspect your gears. You can go with a shorter gear (higher numerically) and that will increase your acceleration. But you'll have to adjust your speedo gear and learn to put up with an engine that's turning higher revs on the freeway (along with crappier gas mileage).
