: Homemade beef jerky =]

OK gang, i'm sitting here enjoying my latest batch, drinking a Shiners, and it came to me i should share my sekrats ;)

Urbs Homemade beef jerky.
1. get a GOOD dehydrator, one with temperature control. I have an Excalibur
Believe me the $20 wal-mart specials dont last.

2. Meat is eye of round roast, or flank steak IF it's lean. Lean is key gang. Slice to your taste, i prefer under 1/4".

3. Marinade: Dale's Sauce is the best invention EVAR. It's hyper concentrated soy-sauce w/ spices. Use only 1 part to 2 parts LITE soy sauce. I prefer LaChoy. In fact, Dale's tastes like uber-LaChoy. Alone Dale's is just way too salty.
Other ingredients: liquid smoke, worchestersire, tabasco, pepper, garlic powder. I like it spicy, so i add a ton of Blairs After Death sauce :devil: They sell it at Target. I let it sit overnight.

4. Get it spread out on your trays, and I dribble residual marinade onto the meat on the trays :) Heat LOW, the point is to dry it, NOT cook it. Needs at least 12 hours. Zip lock it up when done. Enjoy :)
ps makes a great stocking stuffer.

Actually I like jerky a lot. I just might have to try this...
