I was wondering whats the operating temperature on a big block caddy engine??

Go to a parts store and look up the thermostat for that car, that engine in the references that hang on the parts racks.

IF your engine calls for a "180 degree" thermostat the normal engine operating temperature range will be 180 +/- to 200 +/-.

Most emissions controlled (designed) engines run at about 190 - 200. Low temp thermostats (140, 160 degrees) lead to premature engine wear, moisture in cold oil, and poor fuel economy.
