ive searched and seen many links, but no solid info, has anyone just done a stock rebuild, or a rebuild with compression bumped up a bit, then dyno'd the motor, i'm tying to figure out what numbers my 500 out of a 76 eldorado would make with a stock/mild rebuild

I've heard that a stock, low compression 500 has a gross horsepower rating of right around 300.......don't know about the torque.
