1997 DeVille. I'm changing the high-side temp sensor and, well, it's full of refrigerant.

How do I get it [the refrigerant] out safely or temporarily stop the flow so I don't get hosed?

Doubtful...Without the proper equipment, such a DIY job, IMHO, is not advisable. It may be cheaper in the long run to take it to a reputable AC shop, and ask them for a quote...if you try it and get hosed you'll just end up paying twice as much. It looks simple, but it can get complicated so fast...

It has to be evacuated and captured with the proper equipment.
