maybe someone can help a newcommer i want to hookup my aftermarket amp to my stock system in my 2005 denali but there are no rca hookups for audio out on the back of my touchscreen head unit. is there any options that do not require me to buy an aftermarket head unit?

Give crutchfield a call. They usually have convertors that you can use. I forgot exactly what they're called but tell them what you want to do.
I've never personally used anything like this before so I can really comment on how good it's going to sound

its called a line level output converter. it takes a different route by using your speaker level leads and converting them to a suitable line level output that your subwoofer can "see". They work fairly well, though not as well as RCA.
Yes, you need the RCA line converters and you'll need to tap the wires going to the sub in the center console. All the other speakers already have the lows crossed out so the sub line is the only way to tap the lows with the RCA line converters.
