Re: center console
I;m a dyed-in-the-wool woodsman myself, but if you really hate the existing look, you could always buy a piece of leather from your local leathersmith or upholstery shop (with the right grain pattern, natch!) and then give a call to leathermagic.com and have them send you the dye kit for your specific interior leather colour - they have them all. Then dye it, cut to fit, adhere with yellow glue and you're all set.
Conversely, if your friendly with the local machine shop or metalworks place, have them fashion a nice piece of brushed chrome or stainless in the right pattern and then fasten to the console.

Re: center console
Yea for a stainless steel look I would try to find an aluminum or any other thin metal about the thickness of a popcans. But remember you are going to have to take a scuff pad to it alot, because scratches will be on it quickly from anything.
