Adjustable rear sway bars let you dial in over or understeer. For most folks, it's just more adjustments that they have no idea how to make. The V bars are neutrally balanced already, and sized for more firm cornering (FE4 suspension on a car that weighs 300 lbs more). Most folks have no idea about suspension geometries, instantaneous roll centers, etc. This is why, springs that give too low of ride height are also bad for performance. If you want to dial in your suspension, adjustability is mandatory (sway bars, shock damping and rebound, and spring ride height).

There is such a thing as too stiff, especially if you push hard on a race track. Most folks won't push their cars anywhere near the limit to see how well they're dialed in. I've seen 911's with the inside front wheel 3" off the ground in a hard turn. Way out of adjustment! In that case they need to soften the front (go to mounting holes further out) and stiffen the rear, or to to a smaller bar in front.

Skip Barber ftw! Any good driving school will probbaly talk about suspension setup. It's really interesting stuff, though Im sure Ody has forgotten more then I know.

LOL. Actually, I am (aerospace). I've been a gear head since I was 14, and have modified every car/boat/motorcycle I've owned since then. I try to keep the explanations easily understandable without getting too technical, but sometimes there's no way to not get a little technical (explaining wheel offset with basic math). Explaining instantaneous roll center without pictures is useless. lol
