Shouldn't it default to off every time the car is started? Or is it not a momentary switch?

Ice mode button by shifter could be stuck. Try to pull cover, it will come with plastic frame around shifter together with ice mode button and led for gears . Try to manually disconnect that button

Snow mode can only be activated from a stop and is supposed to disengage upon reaching 30 MPH. It's not a momentary switch. Is the CEL on? Take the car to advanced auto or any other auto parts store and they'll pull the codes if any. My wild guess is if your snow mode isn't disengaging it might be the TCM (Transmission Control Module). Try disconnecting the battery for a few minutes and reconnect it. The TCM might reset. Avoid sparking the terminal. Something else might pop.

The car is full of electrical gremlins! And that is putting it nicely.
