If I had a clue I would be happy to help, but like you I am clueless.
If you really want to get rid of them you can cut them off when they are in the fully extended mode. Then when (if) you sell your car you can try to "replace" them into the appropriate sockets. Just use care when cutting, remove all sharp edges, and push the headrest supports back into your seat.
I have a 2012 Sport Wagon and I don't see what the issue is, when the seat backs are up and no one is setting back there, the headrests just block a small bit of the mirror on each lower outside edge. This is no different than any other vehicle as they all have rear headrests. If this is still a problem, fold down the rear set backs and you will have a full view. On the other hand if someone is setting back there, they will block the mirror much more the the headrest ever will.
I don't know what kind of vehicle you had before, but it just might be a case of just not being use to the rear window being so far back compaired to a sedan.
After you own your Sport Wagon for a while, I don't think you will find it much of a problem.
I agree with Tom about the headrests being a non-issue. I have my two outside mirrors adjusted so I can see my blind spots quite well. This is of great assist when changing lanes on a moment's notice while also using the rear view mirror. The headrests do not bother me at all.
